    Signature, a Andrew Weissman restaurant is located on a beautiful property in La Cantera San Antonio. The New Years Eve menu was a nine course tasting. The lobster eclair was poorly executed, and after our table expressed we had a shellfish allergy they still brought the lobster to the person with the allergy. The mushroom soup was one dimensional, and served room temp/cold. The scallops were cooked well, but the grapefruit vermouth sorbet was an awkward and unpleasant attempt at a palette cleanser. The pheasant was quite good along with the potato puree. The venison was decent but slightly undercooked making it very chewy. Chef Weissman himself left the restaurant before 9:15 which seemed a bit unusual for a restaurant that just opened in late November. Only two of four desserts were delivered until our table made a comment about the late delivery. For $750.00 service, (not including gratuity) it was all below standard, I know the staff wanted to enjoy their New Years Eve, I have been in the service industry for over 5 years, but you cannot let the excitement disrupt the flow of service, which unfortunately they did! For my first visit to San Antonio, I was sadly expecting more and will not be returning to a restaurant that was newly opened without the Chef being on the premises for any comments or critiques. All and all Signature has all the hype without backing it up in service or food.

    The restaurant is very beautiful. We were excited to see Chef Weissman coming to our neighborhood.

    However, the excitement was not there.

    We were seated at a table for two which was very small considering the plates and wine glasses used in service. Very crowded. The waitress had a difficult time explaining the evening's specials and was not well versed in wines. Did not ask about any items on the menu.

    For the appetizer, I ordered the veal tongue carpaccio(?) only to find out that is was cured meat instead of the traditional which I had eaten many times.
    For his appetizer, my husband ordered the seared foie gras with orange only to get the other foie gras with pear. Did not send it back thinking that he had ordered the wrong dish.
    However, we were charged for seared foie gras with orange on the bill. Did not ask for an adjustment on the bill.

    I ordered a bottle of the Merry Widow 2014 Sauvignon Blanc which I have drunk before. However, the room temperature was cooler than wine temp. Had to wait some time before it reached a drinkable temp. Very nice but extremely pricey.
    For the main course I had the veal sweetbreads which were good; however, it was presented on a slurry of some type of puree potato, sauce, two sautéed pearl onion, and one large sautéed mushroom. Very confusing on the presentation and too salty.

    My husband ordered the duck which was so tough he thought that he had a wrong knife for cutting. He could not eat.

    Deserts were good and so was the chocolate truffles and other selections at the end. Never offered coffee or any after dinner drinks which we noticed being offered at other tables.

    Overall, the food and service was not up to the standard that we have experienced at other Chef Weissman's establishments.

    Eating at a fine restaurant is an overall affair once you step thru the front door. If one of the links in the chain is weak or broken, the whole experience lacks and falls apart.

    Excellent service and attentive staff. The cocktails were great, the meal was better, and the cheese platter for dessert was terrific! I had the pheasant and my wife had the veal stroganoff. Both meals were really good.
